Pineapple thai fried rice is one of my favourite things to make with rice. I made this a couple of days ago for dinner and I shared the process on my snapchat(nessabee_123) which is why you should follow me. I decide to share my recipe since some of you requested it.
To make this amazing dish here’s what you need

1 whole pineapple
Bell Peppers
1 Knorr
Scotch bonnet/Atarodo

I always start off by prepping all the ingredients that i’ll use during the course of my cooking.I cut all my peppers,onions,mushrooms. Clean up my shrimps and finally cut up my pineapples. The cutting of the pineapple is quite tricky, all you want to do is cut it into two and remove the centre so it can hold your rice. Once you are done set the pineapple in the fridge.

Boil your rice and set it aside. I personally use parboiled rice because i like how it works fast for me. If you want the best the result cook your rice a day before and store.

In a wok or pot heat up your oil and add your onions and allow to caramelize. Add your mushrooms,shrimp,bell peppers,knorr,garlic and ginger. Allow all this to cook and marinate together for a minutes.

Once all your condiments are cooked you can go ahead to add your rice to the cooked ingredients and stir together till everything is mixed together. I then proceed to add sweet corn and let the food sit for another 5-10 minutes. Do not forget to add salt to taste
P.s I decided to add some of the cut pineapples to the rice and it turned out amazing.
