Cooking is quickly becoming a hobby, the more I cook the more I fall in love with the process except the clean up. Cooking has also helped me save money from eating out.I was craving seafood and I had two options: head to Red Lobster or make a home cooked meal and the idea of seafood pasta came to mind. Its basically Jollof pasta with seafood 😉, so here is the recipe.
1 Bell Pepper
2 Scotch Bonnets
1/2 tin of tomato paste
2 Knorr Cubes
Blend Onions, bell pepper, scotch bonnet and tomatoes together.
In a clean pot pour olive oil, slice in 1/2 onion and fry.
Add ginger, garlic, thyme and curry and let sauté for a few minutes.
Pour in tomato paste and fry for a few minutes to get rid of sour taste.
Pour in tomato blend and allow to boil till thick
Once the tomato blend is boiling I add salt and know cubes to taste.
Allow the tomato paste to boil till it is thick then I add the pasta
Mix pasta with sauce till everything is covered. Add some meat stock and water and allow to cook till pasta is done. I prefer mine al dente
